12:00 20 minute drive to Yamaki Jozo: organic shoyu, miso, tofu, pickles. Two-year cedar barrel–aged shoyu and miso made from all Japanese ingredients, including mountain spring water (shoyu) and artisanal salt - located in the hills of Kamikawa-machi.
12:30 Tofu Kaiseki Lunch (Yamaki’s Shisuian restaurant)
13:30 Tour of Yamaki, shoyu pressing, shopping
15:00 Visit local mingei antique shops or organic farm
17:30 Dinner Soba Ra (near Honjowaseda Station), sake and beer included
19:30 Taxi to hotel: Hotel Kan-raku, Honjowaseda (TAXI and HOTEL is NOT INCLUDED in fee)
10:00 Take taxi to Nancy’s house (about ¥3000 JPY - NOT INCLUDED)
